Hollandaise Sauce/microwave version Categories: other 3 large egg yolks 1 tablespoon lemon juice 1 1/2 teaspoon lemon juice 1/8 teaspoon salt 1 dash white pepper 1/2 cup butter or margarine Combine egg yolks, lemon juice, salt and white pepper in microwave bowl. Blend thoroughly. Melt butter in microwave on high for 30 - 45 seconds. Add melted butter in a steady stream to egg yolk mixture, stirring constantly. When butter has all been added, microwave on high about 1 minute, stirring every 15 seconds. Stop microwaving when sauce becomes thick and smooth. HINT: If sauce curdles and breaks, you can recover it by heating 1 ounce of milk to boiling and adding it slowly to the Hollandaise while beating vigorously. Contributor: Rubbermaid |
