Chicken Salad in Bread Bowls

1 envelope bread machine mix
1 recipe chicken salad
1 each cucumber; diced
1 each sweet onion; diced
1 each tomato; diced
1/2 cup vinegar
1 tablespoon sugar
1 dash salt & pepper

Prepare bread at least a day ahead of time, to allow it to completely cool. Use dough cycle, allowing machine to mix and raise the dough the first time. Then, remove dough from machine and divide into 5 equal pieces. Place each in a greased small foil tart pan -- the size of a pot pie. Allow to rise then bake as directed.

While bread is baking, prepare salsa by combining diced cucumber, onion and tomato into medium bowl. Pour vinegar over vegetables and sprinkle sugar. Toss mixture, cover and refrigerate.

When bread has fully cooled, cut a circle in the top, being careful not to cut all the way through. Scoop out bread to within 1/2 inch of the edges.

Place a lettuce leaf in the bottom of each "bowl". Scoop about a half cup of Chicken salad into each prepared bread "bowl", and top off with salsa mixture.
