Chicken Gumbo Casserole Categories: meats/main dish 1/4 cup flour 1 tablespoon oil 4 medium chicken breasts 2 oz Kielbasa; diced 1 can chicken broth 1 can tomato; diced 1/4 cup tomato paste 1 medium red pepper; chopped 1 medium onion; thinly sliced 1 each bay leaf 1/2 teaspoon salt 1/4 teaspoon thyme 1/4 teaspoon red pepper 1 package frozen cut okra 1 cup long grain rice In 5 qt dutch oven, toast flour over low heat until pale golden. (10 - 15 min) Transfer to cup and set aside. Heat veg oil over medium heat and add chicken. Cook 10 minutes until golden. Transfer to plate. Reduce heat and add sausage. Cook 1 minute until light brown - remove to plate. Stir 1/4 cup ckn broth into flour in cup until blended. Add to dutch oven and cook 1 minute, stirring. Add remaining ckn broth. Add meat, tomatoes, tomatoe paste, red pepper, onion, celery, garlic, bay leaf, salt, thyme, spices. Heat to boiling. add okra, cover. Cook 45 minutes. Cook rice separately.
