Almond-Anise Biscotti

2 1/2 cup flour
2 teaspoon anise seed
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter; softened
1 cup sugar
1 tablespoon grated orange zest
2 each egg
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1 1/2 cup almonds; coarse chopped

Combine flour, anise seeds, baking powder & salt. Set aside. Beat butter, sugar & orange zest with electric mixer until fluffy. Beat in eggs, one at a time; add vanilla and almond extracts. Gradually beat in dry ingredients. Stir in almonds. Divide dough in half. On greased baking sheet, form into 2 flattened logs - 14" x 3", 3 inches apart. Bake 40 minutes @ 325°F , until light golden in color. Reduce oven temp to 250°F . On cutting board, cut logs crosswise diagonally into 3/4" pieces. Arrange slices cut side down on baking sheet. Bake 10 minutes on each side. Transfer to cooling rack. Stor in an air tight container. Great with coffee :-)
