Caramel Corn

5 qt popped corn
1 cup brown sugar
1/2 cup butter
1/4 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract

1. Place popped corn in a large non-recycled paper bag. 2. Combine in an 8-cup batter bowl, the brown sugar, butter, corn syrup and salt. Microwave on High 1 - 2 minutes or until mixture bubbles. Stir. Boil for 3 minutes, stirring after each minute. 3. Add soda and vanilla; stir well as this will foam up, and pour over popcorn in paper bag. Shake very well!! 4. Fold bag down and microwave on High for 1 minute. Shake well. microwave on High for 30 seconds. Shake well. Microwave on High for 30 seconds. Shake well and pour onto two cookie sheets. 5. Let cool. Store in airtight container - zip lock bags work well if there IS any to store.
