Southwestern Eggrolls Categories: appetizers/snacks/beverages 1 can (14 oz) corn; drained 1 can (14 oz) black beans 1 package spinach (frozen, chopped); thawed & drained 4 medium chicken breasts; lemon pepper if possible 1 package (8 oz) Monterey Jack Cheese (w/jalopeno); grated 1/2 teaspoon ground cumin 1 dash salt & pepper 2 package egg roll wrappers 1. Bake chicken breast 20 minutes at 350°F . 2. Defrost spinach in microwave. Squeeze excess water. 3. Add spinach, corn, beans and cumin to bowl and mix. 4. Once chicken has cooled slightly, shred into small pieces 5. Add chicken and grated cheese to spinach mixture. Mix well. 6. Roll mixture in eggroll wrappers as directed on package. 7. Fry in hot oil til golden brown. 8. Serve with blue cheese or ranch dressing. Contributor: Chili's Yield: 20 eggrolls |
