Pork Tenderloin Categories: meats/main dish 1 medium onion; chopped 2 tablespoon olive oil 1 tablespoon lemon juice 1/4 teaspoon rosemary; crushed 1/4 teaspoon thyme 1 teaspoon lemon peel; grated 1 each garlic clove; minced 1/2 teaspoon Salt 1/2 teaspoon pepper 2 each pork tenderloin - 1 lb each Combine the first nine ingredients; rub over tenderloins. Place on a rack in a shallow roasting pan. Bake, uncovered, at 400°F for 45 - 50 minutes or until meat thermometer reads 160°F . Cover with foil; let stand 10 minutes before slicing.
