Pasta Salad

1/2 cup oil
3 tablespoon wine vinegar
1 clove garlic
1 teaspoon basil leaves (dried)
1 teaspoon salt
1/8 teaspoon red pepper; crushed
6 oz twist trio macroni; cooked & drained
1/4 cup parmesan cheese; grated
2 cup broccoli flowerets; cooked tender-crisp
4 oz pepperoni; halved & thinly sliced
10 each cherry tomatoes; quartered
1/2 cup mozzarella cheese; shredded

In a large bowl stir together corn oil, vinegar, garlic, basil, salt and red pepper. Add warm macaroni and Parmesan cheese; toss to coat well. Cover; refrigerate 2 to 3 hours. Add broccoli, pepperoni and tomatoes; toss until well mixed. Serve on lettuce-lined platter. Sprinkle with mozzarella cheese.
