Joan's Cookies

2 1/2 cup flour
1/2 teaspoon Salt
1 teaspoon Cinnamon
2 teaspoon baking soda
3 large eggs
1 cup sugar (white)
1 cup sugar (brown)
1 teaspoon Vanilla
1/2 lb butter or margarine (softened)
2 cups oatmeal (regular)
1 12 oz bag almond toffee bits
1 12 oz bag chocolate chunks

1. Mix dry ingredients (flour, salt, cinnamon, baking soda). 2. Cream butter (or margarine), sugars, vanilla and eggs. 3. Add oats, toffee, chocolate chunks and coconut. 4. Drop by ice cream scoops onto lightly buttered (or parchment lined) cookie sheet. Do not crowd - 9 to a sheet. 5. Bake in pre-heated oven at 375 for 10 to 12 minutes. 6. Cool slightly on cookie sheet before removing to colling rack.
