Impossible Pina Colada Pie Categories: desserts 4 large eggs 1/4 cup milk 1/4 cup rum 2 tablespoon butter; softened 1 8 oz can pineapple (crushed) 1 cup coconut 1/2 cup bisquick baking mix 1 4 oz ctn Cool Whip Grease 10" pie plate. Beat all ingredients except 1 cup coconut 30 seconds in blender. Pour into pie plate. Sprinkle with 1 cup coconut. Bake 40 - 45 minutes until knife inserted into center comes out clean. Dot with cool whip. (non-alcoholic version -- substitute 2 teaspoons rum extract and 2 tableshpoons milk for the 1/4 cup rum.) Contributor: Bisquick
